Garden Salad

Atlantic Shores Retirement Community's Chef Eric Doarnberger made a Garden Salad.

Ingredients:

Salad
Arugula
strawberries
cucumber
green pepper
radish

Vinaigrette
.5 cup chopped fresh herbs
1 tbls Dijon mustard
2 tsp honey
1 small shallot, chopped
2 tbls red wine vinegar
2/3 cup olive oil

Directions:

Vinaigrette
Place all ingredients in bowl except for the olive oil and blend together with a wire whip. As you blend the mixture, slowly drizzle in the olive oil to emulsify. Season with salt and pepper.
