Pumpkin Spice Latte


Cinebistro's General Manager Andy Atkins made us their Pumpkin Spice Latte.



Ingredients:

Pumpkin Spice Latte
1 oz. Stoli Vanilla Vodka
1 oz. Kahlua
1.5 oz. Sweet Pie Pumpkin Puree (Recipe Follows)
2 tbsp. Shaken Cream (think Irish Coffee)
Garnish Pumpkin Pie Spice or Cinnamon

Sweet Pie Pumpkin Puree
1 Pie Pumpkin, flesh only Skin and seeds removed)
2 cups water
1 cup sugar
2 tsp. Cinnamon
3 cloves
¼ tsp. ground ginger
¼ tsp. ground nutmeg
¼ tsp. all spice
1 pinch salt

Directions:

Sweet Pie Pumpkin Puree
Peel and seed the pumpkin, cutting the flesh into large chunks. Add the pumpkin pieces with the remaining ingredients to a saucepan and bring to a boil. Reduce heat and simmer until the pumpkin is very tender. Remove the cloves and place the mixture in a blender. Puree until very smooth. Strain through a fine mesh strainer. Chill Completely before use.

Pumpkin Spice Latte
Fill a shaker tin with ice. Add the vodka, Kahlua, chilled puree, cover and shake vigorously. Strain into a martini glass. Float the cream on top of the drink (just buzz heavy cream in a blender for a few seconds to create a pourable, thickened cream.). Garnish with a shake of pumpkin pie spice or cinnamon.
