Gourmet Chicken Salad & Pasta Salad
Cliff's Bistro's Chad Riggs showed us how to make Gourmet Chicken Salad and Gourmet Pasta Salad.
1 celery rib, cut up
4 cups cooked chicken, and cut up
1 cup mayonnaise
1/4 cup slivered walnuts
Seasoned with salt and pepper
2 cups Elbow Pasta
1 cucumber cut up
1/2 italian dressing
Season with Dill
2 tbsp of olive oil
Combine mayonnaise, pepper and salt, and blend well. Toss with chicken, celery, crasins and walnuts . Serve on 2 slices of whole wheat toast topped with fresh spinach and provolone cheese.
1. Cook 2 cups of pasta. . I recommend large elbow macaroni noodles. Cook the pasta in a gallon of boiling water seasoned with 2 tablespoons of olive oil until just tender. Drain and rinse the pasta.
2. Pour pasta into large mixing bowl add chopped cucumber, grape tomato, and dressing. Mix ingredients thoroughly and garnish with dill
