The Mahalo


It's Cook in Our Kitchen week and J.R. Drake made "The Mahalo", which means thank you in Hawaiian.



Ingredients:

Fillo Dough
Crushed Pineapples
Coconut Flakes
Ricotta Cheese
Cottage Cheese
Brown Sugar
Cinnamon
Nutmeg
Macadamia Nuts
Vanilla Cool whip
Special secret ingredient

Directions:

-Mix 3:1 of cottage cheese to low fat ricotta cheese, add 2 cups of lite brown sugar and 3 teaspoons of cinnamon and 1/4 cup of pineapple juice. Tablespoon of nutmeg.
-Roll out fillo dough and measure with bottom of bake pan to cut, coat with butter spray.
-Take crushed pineapples and special ingredient put into blender for a hot second, to slightly puree, pour off excess juice.
-Take flaked coconut and toast in medium heat buttered pan, flip to golden brown mixed color, remove from heat.
-Layer dish starting with cheese filler topped with toasted coconut, then pineapple then cheese and coconut then pineapple and final later of cheese and coconut and topped fillo dough.
-Once completed out of oven, slice, serve and top with scoop of vanilla cool whip and shaven macadamia nuts.
-Serve cold or warm.
