Ruth's Chris' Signature Crab Cakes
Ruth's Chris Steak House's Chef Rick Overbey made their Signature Crab Cakes.
1/2 Pound Colossal Crab
1 1/2 Pound Backfin Crab
2 1/2 oz. Cracker Meal
1 Cup Egg Mixture
Lightly toss together both crab meats, with cracker meal. Careful not to break apart Lump Crab. Carefully fold in egg mixture, until well mixed. Portion Cakes and bake at 425 Degrees for 5-7 minutes when ready.
Mix Egg and Mayonnaise together until blended. Add remaining ingredients and mix well.
