Not Your Grandma's Spaghetti


Passion The Restaurant's Chef Garrett Barner made his "Not Your Grandma's Spaghetti & Meatballs."



Ingredients:

1 spaghetti squash, split spaghetti squash length wise and remove seeds

10 Sea Scallops – Coat in your favorite blackened spice

Your favorite marinara sauce and add a pinch of red pepper

Directions:

Roast the spaghetti squash with skin side down in 375º oven about 15 minutes. Remove from oven and cool. Drag a fork across the squash to “Spaghetti” the squash.

Add 4 tablespoons of vegetable oil to a hot saute pan and add scallops. Sear each side for 3 minutes.

In a bowl, place spaghetti squash in center. Dress with marinara sauce and add 2-3 seared scallops per serving.
