Penne Alla Vodka
Ingredients:
¼ C. EVOO3 T. Fresh Shallot, Small Dice
2/3 C. Fresh Roma Tomatoes, Small Dice
2 oz. Fresh Basil Chiffonade
1/2 oz. Vodka
6 oz. Marinara Sauce
3 T. Heavy Whipping Cream
2 handfulls Penne Pasta, al dente
1 T. Grated Parmesan Cheese
Directions:
-In Sauteé pan, lightly sweat shallots in EVOO until translucent. Add Roma tomatoes and basil, followed by the vodka, and carefully flame off vodka, making sure not to flame the pan too much. After excess alcohol is cooked off, add marinara, heavy cream and season to taste with S&P mix.-Add the marinara sauce and bring to a boil. Reduce over medium heat about 15 percent. Toss with Penne pasta, Parmesan Cheese and garnish with chopped Parsley.
