Grilled Shrimp Summer Salad


Cotton Southern Bistro's Chef Jeff Brown made his Grilled Shrimp Summer Salad with Citrus Vinaigrett



Ingredients:

6 grilled shrimp
Mixed greens
4 strawberries
¼ C Mandarin Oranges
2 oz Chopped pecans
Goat Cheese

For Dressing
½ C OJ
¼ C red wine vinegar
3 T honey
¼ C olive oil
2 T chopped parsley

Directions:

Grill shrimp until firm and set aside. In large bowl mix salad greens, diced strawberries, mandarin oranges, pecan pieces and 3 oz of dressing. Place tossed salad in bowl, top with Goat cheese and shrimp.
