Salmon Picatta


Beach Movie Bistro's Executive Chef Karah Woodard made us Salmon Picatta.



Ingredients:

1 6 oz. salmon
8oz. linguine pasta
Salt and pepper to taste
1/4 cup white wine
2oz. liquid butter
1oz. capers
2oz. tomatoes
1/2 cup fresh spinach


Directions:

Start by cooking the salmon on the grill lighty seasoning the fish. Next in a saute pan in hot oil cook the tomatoes and spinach, adding capers and 2 lemon slices. After bringing to temp add some white wine and butter. As it thickens turn salmon and continue cooking. After that heat up your pasta. Add the pasta to the saute pan to thicken up picatta sauce. Place pasta into bowl add the cooked salmon and pour over the rest top.
