City Dock's Salmon Steak


City Dock's Exec. Master Chef Robert Cillizza made Salmon Steak with Avocado Salsa.



Ingredients:

1 CUP PLAIN YOGURT
1 GREEN ONION FINELY CHOPPED
1 TABLESPOON CHOPPED FRESH BASIL
½ CUP DICED RIPE AVOCADO
½ CUP DICED CUCUMBER
1 TEASPOON OLIVE OIL
SALT AND PEPPER TO TASTE
2 SALMON STEAKS EIGHT OUNCES EACH

Directions:

IN A SMALL BOWL STIR TOGETHER YOGURT, GREEN ONION, BASIL, AND SALT AND PEPPER. FOLD IN AVOCADO, TOMATO AND CUCUMBER. PREHEAT OVEN TO BROIL. PLACE SALMON IN PAN AND SPRINKLE WITH SALT AND PEPPER. BROIL FOR 3 TO 5 MINUTES ON EACH SIDE. SERVE SALMON IMMEDIATELY WITH SIDE OF SALSA.
