Pan Roasted Vegetables & Cobia


Pan Seared Cobia Filet over Eastern Shore Salad Greens with Roasted Petite Zucchini Squash, Sweet Co



Ingredients:

Veggies:
2 cups sweet corn
2 cups petite zucchini
2 cups tomatoes
4 tbsp. olive oil
pinch of fresh thyme
1 tbsp. of adobo seasoning

Viniagrette:
2 tsp. dijon mustard
1 garlic clove
2 tbsp. red wine vinegar
1/2 cup olive oil
pinch of fresh thyme and adobo seasoning

Cobia:
Cobia Filets

Directions:

Veggies:
Sautee corn and zucchini in oil for 5 minutes then add tomatoes. Sautee for another 3-5 minutes.
Put veggies on a sheet pan and roast in oven at 400 degrees for 10 minutes.
Cobia:
Season fish with salt and pepper then sear fish for 2-3 minutes on each side.
