Saffron – Almond Rice Pilaf


Farm Fresh Executive Chef Bob Hirasawa makes Saffron-Almond Rice Pilaf.



Ingredients:

3 Tbsp Unsalted Butter
½ Cup Diced Onion
1 tsp Chopped Garlic
½ Cup Slivered Almonds
2 pinches Saffron Threads
2 Cups Uncooked Long Grain White Rice
4 Cups Vegetable or Chicken Broth
¼ tsp Kosher Salt
Pinch Ground Black Pepper
¼ cup Chopped Fresh Parsley (reserve for garnish

Directions:

1)In large pot, melt the butter over medium-high heat.

2)Stir in Onions and Garlic cook for 5 minutes until Onions turn clear.

3)Add the Almonds, Rice, and the Saffron Threads, then stir a couple of times to incorporate.

4)Add the Broth and mix well, season with Salt and Pepper.

5)Cover and reduce the heat to low.

6)Simmer for 15-20 minutes until liquid is absorbed.

7)Remove from heat and let stand.

8)When ready to serve fluff with fork and mix in Parsley.
